Over the past few weekends, I’ve spent a fortune on ice lollies for the garden (two for one at Sainsburys) and ice creams in the park. Probably VERY MUCH like the rest of the country.
It has made me think about the little plastic lolly moulds my mum used to fill for my brother and I when we were little. I can remember the enjoyment of fishing one out of the freezer and prising off the cover to get to the juicy lolly beneath. It also made me wonder why on earth I’m not doing that myself, I mean, how easy?
So I’ve just bought some moulds and I’m going to have a go at some of these Pinterest-ing concoctions.
Chop up some fruit, add into the moulds and top up with coconut water. Or puree fruit of your choice, layer in plastic cups, add a lolly stick and freeze. I really love the idea of cutting up triangles of watermelon, adding a lolly stick and freezing.
And with no added nasties, you’ll know exactly what’s in them.

Blueberry, strawberries, honey, yoghurt = easy. Greek yoghurt would be delicious too.
